THIS... IS... PERSIAN FOOOOOD!!!!

More khoreshts!!

I decided to make khoresht-e-karafs (celery stew) for tonight's dinner and it turned out surprisingly good! I mean, it was kinda sorta like what I would have had at home. so kinda sorta authentic! And it wasn't difficult at all. All that I needed to do was:

1) slice 3 medium onions (probably the most difficult part of cooking this meal)
2) cut 1.5 lb lean beef stew meat into smaller chunks
3) let onions and beef brown in pan with about 3 tablespoons veggie oil
4) add salt and pepper and turmeric (1/2 tsp + more to taste) to onions and beef
5) add 2 cups water, cover, and let simmer on low heat for 30 min
THEN
6) chop lots and lots of parsley and mint. Like... 2 bunches of parsley (2 Trader Joe packages) and a good handful of mint

7) chop 7 or 8 stalks of celery
8) fry celery in pan for 10 min with some oil

9) add in parsley and mint and fry for 10 min more
10) add lime to the meat
11) add meat mixture to celery and herbs
12) add a little red wine vinegar for a little more sourness (we ran out of limes)
13) simmer until saucy

14) warm up leftover rice :)

and VOILA. :)


Annndd theennnn: chocolate caramel pecan cupcakes for dessert :) I made them last night instead of sleeping (originally for my brother but i ended up making like 1000 so we got stuck with about 950 of them). We force fed one to Kevin (microwaved it and topped it with vanilla ice cream and EVERYTHING!! He got the royal treatment).
